Last night my roommate and I hosted an Appetizer & Dessert Party for our friends so I thought it was the perfect opportunity to try a new recipe. I made three things, but only one of them was a recipe I hadn’t tried before.
Last year for my 21st birthday, my aunts and grandma gave me a cookbook of 21 recipes. I finally decided on Sassy Salsa Squares. I forgot to take a picture of the final product, but here they are before going in the oven. They turned out pretty good, but I think next time I might spice up the recipe and add peppers, onions, olives, etc. to make more of a casserole.

Sassy Salsa Squares
- 4 cups shredded Colby Jack cheese
- 1/2 cup salsa
- 3 eggs, beaten
Mix salsa and eggs together. In a 9 inch square baking dish, layer 2 cups of cheese. Add all of salsa mixture and top with remaining cheese. Bake 30 minutes at 350 degrees. Cool before cutting into one inch squares. Enjoy!
