#54. Black Joe Cake

My birthday cake from scratch. I think both my mom and grandma were surprised I actually made a cake from scratch. Great recipe from one of my favorite restaurants in Hershey! The frosting was a little bit of an experiment of several recipes but turned out well. Definitely a keeper!

Black Joe Cake

  • 2 cups flour
  • 2 cups sugar
  • 3/4 cup cocoa
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 cup oil
  • 1 cup milk
  • 1 cup hot, brewed coffee
  1. Mix dry ingredients in a large bowl until thoroughly combined. Slowly add the wet ingredients, adding the hot coffee last. Mix until all ingredients are well blended (batter will be thin).
  2. Pour into greased 13×9 pan. Bake at 350 F for 25-35 minutes, until cake tester comes out clean.

Peanut Butter Cream Cheese Frosting

  • 1 package cream cheese, softened
  • 1 lb powdered sugar (I did NOT use this much…just added some until it was the consistency I wanted)
  • 1/2 cup peanut butter
  • 1/4 cup butter, softened
  • 1 Tbsp vanilla extract
  • 1/4 cup milk
  • 1 Tbsp brown sugar
  1. Cream the butter, cream cheese, and peanut butter together, add vanilla, brown sugar, and powdered sugar. Slowly add milk while beating on medium speed. Add more powdered sugar for desired consistency.
